2022: Launch of frozen bread production with Russia's first robot manipulator

The production of frozen bread with the first robot manipulator in Russia has been launched. We are talking about a project that was implemented at the Karavay plant in St. Petersburg.

According to TASS, citing the general director of the enterprise, Andrei Trofimov, the robot manipulator is designed to automate the production of round-shaped products. The capacity of the new production can reach more than 1.5 thousand tons per month, which will give revenue of 2 billion rubles a year and will make it possible to reach self-sufficiency within five years, Trofimov said. He added that investments in equipment amounted to 400 million rubles, 200 million rubles were spent on the construction of a new workshop.

Production of frozen bread with robot manipulator launched

The new site will produce frozen bakery products of 95% readiness for HoReCa establishments and retail chains. The new line will produce baguettes, three types of round bread and three types of chiabatt.

Ivan Fedyakov, founder and general director of the INFOLine information and consulting agency, believes that Karavaya's investments are justified, since frozen bakery products are indeed in demand by consumers and additionally stimulate sales at the same gas stations and in stores.

Last 2021 year alone, the number of bakeries in St. Petersburg increased by at least 10%, and their revenue increased by 30%. In stores, catering establishments with a wider range, such pastries often complement or displace industrial bread, as they have better consumer properties. At the same time, the cost and margin of these products is much higher, this allowed businessmen to actively develop this direction, - said Ivan Fedyakov.

The decision to develop frozen bakery products on the market is timely, says Albina Koryagina, partner of NEO Center. After leaving the Fazer market (its business in Russia was bought by BHK Kolomensky), the frozen bakery market will be redistributed, she expects.[1]
