Terroir

Unique coral-metamorphic soils with pronounced minerality, the earth has a rare soil property - metamorphism. In the fields of the valley, you can see multimillion-dollar traces of metamorphism: quartz sandstone, quartzite, clay slate, etc., fossilized "inhabitants" of past millennia - tubes and sprigs of coral reefs 270-280 million years old. As a result of surveys, 5 soil species were identified. The northern slope of Perchem Mountain is the exit of solitary coral reefs to the surface.

The valley of St. Sava is located at the foot of Mount Perchem on the site of one of the medieval Greek monasteries and has an 800-year history. The existence of a winery in the Ai-Savva Valley is confirmed by the originals of wine tax documents found in the archives of Venice and Genoa, as well as notarial records of wine sales from the Ai-Savva Valley, dating back to the 13th century. The name of the valley comes from the Greek monastery of St. Sava, consecrated, in honor of St. Sava, which was located at the foot of the mountain in its eastern part and was located here in the Middle Ages. At the end of the 19th century, Mr. Creech produced champagne from his own grapes on these lands. In 1837 he began selling champagne under the brand name of the French firm Rederer. In 1846 at the exhibitions, Creech received numerous medals and awards for his champagne. But in 1848, despite the successes in winemaking, the production of champagne by Mr. Creech ceased to exist. Then Christian Steven, Academician of the St. Petersburg Academy of Sciences, first director of the Nikitsky Botanical Garden, became the owner of the Valley.
