Terroir
The coast of the Crimean peninsula in the village of Novy Svet is famous for its picturesque landscape, subtropical climate, environmentally friendly terrain and juniper grove. The white chalk soils of the terroirs of the Sevastopol wine zone are rich in calcium and give birth to wine with bright acidity, minerality, freshness and complex structure, which is typical for the best champagne wines in the world. The limestone chalk soil of the Sevastopol zone perfectly holds solar heat, provides relative temperature stability, and its saturation with mineral substances gives champagne a special aroma and sophistication.
