In October 2023, it became known about the launch in the Moscow region and the Stavropol Territory of the production of food products from crickets.

According to Izvestia, crickets can be used as the main ingredient for cookies, chocolates, pasta and other products.

The insects are made into flour by heat treatment of frozen crickets. Then it is used in the production of dough, from which products are made. The proportion of cricket flour in the dough varies from product to product, but does not exceed 20%. Cricket flour is rich in proteins and iron. Crickets are grown in certain conditions and with a diet - they are fed pumpkin, squash and corn.

According to him, the use of crickets is absolutely safe for humans. However, technologists note that chitin in the skeleton of crickets can have a threat to humans if improperly processed, causing allergies.

In addition to RosEnergy, crickets are also used in food production at one of the enterprises in the Moscow region. According to businessman Denis Ter-Akopov, his company has been growing crickets for 10 years, but they began to use crickets in the production of food for humans recently - earlier the company was engaged in animal feed.

According to the entrepreneur, the use of crickets is absolutely safe for humans, since experts examined crickets "from antennae to legs" and did not find anything potentially dangerous.

As the candidate of economic sciences Inna Litvinenko notes, the use of cricket flour can help solve the problem of hunger due to the high protein content in flour.[1]
