It became known about a new startup in the field of plant meat. The French company Edonia is developing meat from microalgae. This was reported on April 24, 2024 by TechCrunch.

The company received an investment of 2 million euros. They are planned to be invested in the production of food ingredients from plants. CEO Hugo Valentin claims that the final product is more nutritious than real meat.

Edonia Plant Meat

Edonia is not Valentine's first company. He is also the co-founder of Ammi, a company that deals with developments related to the consumption of spirulina. Edonia produces protein through a unique microalgae transformation process called "edonization."

Edonization transforms microalgae biomass into a textured ingredient with different flavors, smells, textures and so on. Edonization changes the color of algae from green to darker brown. The texture turns into a soft meat. The smell of this meat resembles smoked meat or grilled meat. The product was named Edo-1.

We want to resolve the difficulties with the organoleptic aspects of microalgae. Now microalgae have a reputation for green powder with a bitter taste. The goal of our technologies is to solve this problem - said CEO Hugo Valentin.

Edo-1 is the startup's first product. According to Valentin, their product tastes and textures more like meat than meat from soy proteins. Moreover, there are more proteins in the Edo-1 than in the present meat.

By mid-May 2024, Edonia has established the production of several kilograms of meat, but the company plans to reach a production capacity of several thousand tons in the future.[1]
