2024: Spice production in Russia increased by 13.7% over the year and reached 22.8 thousand tons

The production of spices processed in Russia reached 22,794,1 tons in 2024. The figure is 13.7% more compared to the results of the previous year. The growth was driven by increased demand in the domestic market and in the export segment. Modernization of production facilities also contributed to the increase in output. The Central Federal District became the leader among macro-regions with a share of 50.4% of total production. This is evidenced by data from a study by Alto Consulting Group, published in early October 2025.

The production structure of spices in Russia is characterized by a high concentration in the central regions. Large processing facilities are concentrated in the Central Federal District. The high level of production capacity of the region contributes to market stabilization. The decrease in dependence on imports is the result of the development of domestic production.

Over the past year, the production of spices in Russia increased by 13.7%, reaching a volume of 22.8 thousand tons.

The Volga Federal District provides about 20% of the spice production. The Siberian Federal District produces 15% of its products. The Southern and Northwestern districts together give 10% of the output. The rest of the regions of Russia produce 4.6% of spices. The concentration of production in the Central Federal District ensures the economic stability of the industry. Product quality control is facilitated by the presence of large production centers.

Average producer prices for processed spices rose 12.5% between 2022 and 2024. The cost increased from ₽661 165.7 per tonne to ₽743 950.1 per tonne. The increase is due to an increase in the cost of raw materials. The rise in the cost of energy increased processing costs. Modernization of processing equipment required capital investments.

July 2025 data showed a further 2.9% increase in prices compared to the previous month. The cost reached ₽991 493.2 per ton. A sharp increase in price in a short period indicates tension in the raw material market. Manufacturers are forced to pass on the increased costs to buyers of products.[1]

2023: Sales of spices in Russia for the year increased by 12.5% and reached ₽40 billion

In October 2024, it became known that the Russian spice market showed significant growth in 2023, reaching a volume of ₽40 billion. According to a study conducted by NeoAnalytics, this is 12.5% more than in 2022. In physical terms, the market volume exceeded 50 thousand tons, an increase of 16.9% over the year.

According to RBC, analysts note that 2023 was successful for the spice and seasoning industry against the background of positive dynamics of the main macroeconomic indicators, including retail trade and cash incomes of the population.

The key growth factor was the increase in domestic production, whose share in the overall market structure reached 75.8%. For comparison, in 2017 this figure was 48.3%. Experts emphasize a significant strengthening of the position of domestic manufacturers in recent years.

It is interesting to note that 83.7% of domestic production is exported, while domestic consumption accounts for only 16.3%. This indicates the growing competitiveness of Russian spices in the international market.

Despite the overall increase, spice imports to Russia showed negative dynamics, which contrasts with a positive increase a year earlier. Export supplies, although they continued to grow, slowed down somewhat compared to the previous period.

Among the most popular spices and seasonings used to create mixtures or direct resale are peppers, vanilla, cinnamon, cloves, nutmeg, matsis, cardamom, anise seeds, badyan, fennel, coriander, cumin and bay leaf.

Market experts attribute the rise in spice sales to several factors. First, an increase in the interest of Russians in home cooking and experiments with various cuisines in the world. Secondly, the development of domestic tourism contributed to familiarity with regional cuisines and, as a result, an increase in demand for specific seasonings. NeoAnalytics analysts predict further growth in the spice market in Russia until 2027.[2]
