The turnover of public catering in St. Petersburg in 2024 amounted to ₽284,1 billion, which is 34.6% more than in 2023 in comparable prices. Petrostat statistics published in January 2025.

According to RBC, the growth of indicators began in April 2024. By the end of the first half of the year, the increase reached 28%, according to the results of three quarters - 33.1%, and in November 2024 the increase was 37.4% compared to November 2023.

The revenue of cafes and restaurants in St. Petersburg for the year increased by a third and reached ₽284,1 billion

Maxim Zhukov, chairman of the catering committee of SMEs of the St. Petersburg branch of Business Russia, noted that the turnover of enterprises in the middle price segment increased by 10-20% in 2024, but this increase is due to higher prices, and not an increase in attendance.

General Manager of Restaurants Arama Mnatsakanova Alexander Batushansky said that the cost of positions in the menu of restaurants and cafes in St. Petersburg on average increased by 15-20%. The reasons were an increase in the wage fund due to a shortage of personnel, an increase in prices for food and alcohol.

Profits are reduced for almost all enterprises in the middle price segment, with the exception of "star" projects. On average, the drop in net profit is 30-40% for companies operating in full compliance with the law, - said Maxim Zhukov.

According to experts, the purchase cost of products increased by 15-20%, and labor costs increased by 30-50%. At the same time, the attendance of institutions remained at the level of 2023, with the exception of the New Year holidays, when an increase of 10% was recorded.

In the first quarter of 2025, a further increase in 5-7% prices is expected, and in the second quarter - another 10-15%. The main reasons will be an increase in the income tax rate and an increase in purchase prices. By the summer of 2025, the cost of dishes and drinks may increase by another 10-20%.[1]
