Company

The gastronomic center Eataly is located in Kiyevsky trade hotel complex on the area about 7,500 sq.m from which about 2,500 sq.m are production premises. Ostalnaya Square is separated into separate restaurants, cafe, with the market zones integrated into them. Construction of the project was carried out by Cera Group company.

Vergnano cafe

The interior of a zone is designed and implemented according to the concept of the network of Vergnano coffee shops fulfilled for many years around the world. Technology preparation of the equipment is concentrated under a podium for comfortable and practical use and service of the engineering systems.

Pizza & Pasta / Fresh Pasta

Placement in this zone of two wood-fired furnaces weighing 3 tons everyone. The project of a complex of actions for gain of a plate of overlapping with additional redistribution of load of overlying overlapping using guy connections was developed for implementation of this solution, thanks to the fact that the upper plate of overlapping has the increased bearing capacity. Besides, for operation of furnaces, to be exact for withdrawal of products of burning, the system of purification of gases using hydrofilters is implemented. A system throws out purified gases above an upper point of the building. For the device of furnaces with naked flame indoors in the public building the relevant STU are developed and approved with city services. For unloading, rise and horizontal transportation of the vysokotonazhny and large-size equipment the separate project of works which included analysis of front constructions and glazing and the device of the portable area out of borders of the building was developed and approved. Besides, in the neighbourhood with furnaces one of refrigeration chambers connected to the central system of technology cold supply is located.

On this project two systems of cold supply are provided: the general system of cold supply and conditioning and technology cold supply which are in turn subdivided into two subspecies everyone. The general system of cold supply and conditioning is subdivided into the system of preparation of air using cassette and channel fankoil and into the system of preparation of the induced air in the central incoming installations. Technology cold supply is subdivided into cold supply of refrigeration chambers and a retail store equipment from the central refrigerators and into systems with individual refrigerating units (server, the cross, aging room, Tecnomac, etc.). The central equipment has the impressive sizes and demanded special attention and study for integration into dense network of the equipment of the hotel center located on a roof. These works were integrated to production of the special works directed to noise reduction, vibrations, etc.

Mozzarella

In this zone young cheeses prepare (mozzarella, burrata and others) and also further production of firm sorts of cheese is planned here. Production is possible thanks to the special Spanish technology equipment using the network of steam lines of stainless steel connected to the steam generator. In this zone, as well as in many other zones of cooking with the raised moisture conditions the waterproofing is executed of materials of new generation. The penetrating structures create a volume barrier in a concrete body against penetration of water due to growth of penetriyushchy crystals.

Fish department & Seafood restaurant

Feature of this zone is the hi-tech French equipment requiring high-precision and reliable engineering training for its connection. Here storage, cutting and implementation of fish and seafood is made. From the interesting systems It should be noted cooling of fish and seafood with fog. The system of fogging of high pressure are used for maintenance of optimum level of humidity at storage of fish and seafood, preventing dehydration, and saving trade dress. The system of fogging naturally supports the necessary level of humidity and will help to control smells in the next departments. In Seafood restaurant, also as in Meat restaurant and at Beer restaurant, the system of local extracts from places of cooking which are integrated into a single separate centralized system with the central equipment on a building roof is used. In addition, for safety of use and functioning of the equipment of extracts, a system automatic Ansul is provided in channels of ventilation and umbrellas.

Salami & Cheese, Meat rest, Rotisserie, Butchery

For this zone, according to sketches of the Italian architects, the project for the metalwork bearing decorative appointment was developed and implemented.

Aging room

These premises are intended for ripening of the made and brought young cheeses. The feature of the premises of ripening of cheeses is the microclimate, it is the necessary temperature and air humidity. These parameters are reached thanks to use of the central system of technology cold and integration to canals of ventilation of humidifiers. The systems are supported by the set parameters in the automatic mode.

Bakery

Feature of this zone, as well as the zone Pizza & Pasta, the arrangement indoors of the furnace for baking of bread on solid fuel is. If in the previous zone of the furnace were delivered by in assembled form, then here, using the representative of the plant of the producer, we carried out the complete assembly of the equipment combined with actions for fire protection in construction execution. The plate of overlapping is strengthened, according to the developed project. Emission of exit gases is here too implemented through network of flues with the hydrofilter integrated into it. The network of flues removes exhaust gases above an upper point of the building (as well as in the previous zone - above the 13th floor), the total length of routes of the flues executed of corrosion-proof pipe sandwich is more than 170 meters. According to project solutions, on the termination of each route of flues the special exhaust fan creating the permitted air pressure in network which interferes with its penetration out of pipeline limits is installed. One more feature of this zone is the hi-tech equipment Tecnomac for shock freezing, storage and preparation of products for preparation of bread. Given the equipment requires the big electric power and connection of other engineering systems. Using the representative of manufacturer assembly and debugging of the equipment by an engineering part was made.

Ice cream LAIT & Pastry

In this zone it is possible to admire beautiful interior solutions. It should be noted freely hanging Ecophon SoloBaffles elements which are the acoustic solution for our interior.

Brewery

In a zone of brewery the complex of works on installation and connection of technology equipment was made for preparation of beer. The system of truboprod from food stainless steel is implemented. Walls of the premises are processed by special hydrophobic structures for prevention of penetration of moisture in finishing materials and formation of a fungus. From this zone in beer restaurant it is laid pivoprovod, integrated into building constructions of the basis. The system of emission of the fulfilled hot steam in the premises with cooling from initial temperature about 100 With to air temperature indoors is implemented.

Brasserie

At beer restaurant the natural finishing materials creating the special atmosphere are mainly used. Furniture of the Russian and Italian partners.

Lavazza, Venchi

In this zone there are interesting implemented architectural concepts at construction execution (partitions, a ceiling). In finishing of columns 3D material with postprocessing is used.

Kitchen school

School. This zone is very saturated with utilities, such as ventilation, conditioning, local ventilation from cooking zones, the large volume of electro-preparation.

4.20 Restaurant

Four seasons – four menus from 20 regions of Italy. The unique interior with primary dominance of natural materials is implemented together with the Italian decorators. Decorative plaster of walls is developed and executed by our decorators according to the Italian sketches. In a lunch zone according to acoustic measurements and calculations, acoustic preparation of a ceiling is executed. The special acoustic covering which, together with natural floor covering from solid wood, allows to extinguish amplitude of acoustic waves is put.

History of construction

In 2017 the Cera Group company completed the flagman project on implementation of the Italian gastronomic restaurant center Eataly in Kiyevsky trade hotel complex.

The project deadline made about 1 year (2016-2017) – with breaks for completion of engineering sections of the project, design of client zones, reselection of the central engineering equipment. Aggregate term of continuous work on the project made about eight months.

In the course of construction modern materials, technological and engineering solutions were applied.

In the center 3 furnaces on solid fuel are used that means development of project solutions and the embodiment of a system of special air ducts with the hydrofilters integrated into it for emission of smoke above the building roof fad.

For maintenance of necessary moisture conditions in certain premises of the center channel humidifiers with automatic maintenance of the set parameters are used. The difficult installation of internal utilities which is of interest the big density and task "go in" in limited space of ceiling and floor constructions is executed. The systems of ventilyation with installation of the central incoming and exhaust machines and trace of air ducts in the ready closed mines with 4 on the 6 and 13 floor of the building are installed.

Water disposal from zones of cooking is implemented through network of tray ladders of stainless steel. Trace is implemented in construction of a floor.

On a special task from the client elements of designer light were developed, designed and made.

Jointly with specialists of the company of the supplier of technology equipment work on integration of the equipment from different foreign producers and preparation of communications for their connection is carried out.

Works on the device of a cement and sand tie, plastering of surfaces, preparation of surfaces under painting, painting of a ceiling were executed by the mechanized method.

At accomplishment of a waterproofing modern coating materials in a complex with processing of all adjunctions elastic polymeric materials are applied.

The complex of works on reconstruction of five input distributors is carried out. The unique technology of laying of a parquet board on the basis unprepared by plywood is applied. Complex installation of security systems and video surveillance is executed.
