The Russian Meal holding in October, 2017 provided the system intended for installation at the baking and confectionery enterprises. It simplifies automates and completely controls process of a testoprigotovleniye, reducing at the same time production costs.


Features

"Recipe manager" creates an accurate algorithm of dosing of components and work of all system. Optimizes production processes, creating thereby stability of quality of products.

Direct integration the recipe manager with schedule system of the baking enterprise and with the equipment for dosing of components allows to follow precisely the set recipe, to structure preparation of components, to make high-quality products and to save, thanks to decrease in a share of defects and an excessive consumption of raw materials.

How it works

Two employees of the baking enterprise are involved in work about the recipe manager: technologist and operator. The technologist's task — to create technology tasks and to enter into the system recipes with the exact indication of weight of a product and proportional ratio of input products. Each change the operator receives technical specifications on the display the recipe manager. In a task it is specified what products and in what quantity need to be made for change.

The operator selects a product, and then in the set order begins to weigh the set quantity of each of components. In the presence of the equipment for the automated raw materials dosing, the task of the operator comes down to start of automatic systems.

The recipe manager minimizes risk of a deviation from the set recipe that guarantees stability of quality of the made products. Besides, a system saves data on the done transactions and a consumption of raw materials which the technologist of the enterprise at any time can browse.

How there was an idea of creation "recipe manager", the director of the department of complex equipment of baking productions of Russia and the CIS countries of Russian Meal holding Pavel Golyakov told: "Closely working with the baking enterprises, we often faced the same problem — stability of quality of the made products. Bakers complained of instability of quality from change to change. On average, four crews in which all prepare differently, despite strictly registered compounding, quality of products very uneven work at the enterprises with the round-the-clock production. It is not pleasant also to consumers who lose trust to a product, and heads to whom it is inconvenient in terms of raw materials accounting. At the big plants process is standardized at the expense of an automated system of microdosing. And here on small productions acquisition of the equipment for microdosing — is not paid back. We were faced by a task to solve this problem. We aimed to create a system which could force employees to do one and too in different changes. And, eventually, send "recipe manager" to creation. It works on a tough and clear algorithm, forcing employees to perform a certain set of operations in a certain sequence and with a certain accuracy".
