Scientists of the Perm Polytechnic have developed a simulator for food industry specialists. The university announced this on June 3, 2024.

To increase the level of knowledge and skills, specialists from different industries create and use computer simulator complexes (CPC). They simulate real production processes, and allow a person to practice and improve their skills in a safe and controlled environment. PNIPU scientists, together with colleagues from ROSBIOTECH, have developed a prototype computer simulator, which is based on a mathematical model of the technological process and a methodology for assessing the performance of exercises for food production operators. The simulator will help domestic enterprises speed up professional training and advanced training of specialists, on whom the safety of technological processes and high-quality import substitution of products on the Russian market depend.

The efficient organization of production processes at modern enterprises of the food industry and the quality of products largely depend on the level of professional knowledge and skills of specialists. For example, technologists should be able to develop optimal product formulations and control the quality of processes, operators should have sensorimotor skills in timely and accurate execution of technological operations, and specialists in automation, informatization and robotization should be able to create mathematical, algorithmic and software for control systems at the enterprise.

Scientists of the Perm Polytechnic with colleagues from ROSBIOTECH have developed a structure and mathematical model of a computer simulator complex for training production operators. It can be used in meat, dairy, confectionery and other sectors of the food industry.

Development allows you to customize and store knowledge about a specific process plan. Virtual the production environment can be available to run as a program on a computer,, tablet smartphone or a layout of real production equipment, as well as based on the application of technologies/. VR A AR teacher or instructor has the ability to generate different exercise options for each student in terms of content and level of complexity.

The CPCs being developed can be adapted to train operators of various types of process equipment and installations in food production. For example, to teach the skills of sterilizing canned food in an autoclave, sawing meat carcasses, and carrying out work on transshipment equipment.

During the execution of tasks, data on the quality of actions taken is collected automatically and checked for compliance with regulations. The system displays if the specialist pressed the wrong button, and if he performed the correct action, he calculates how much time he spent on it. This technology increases the objectivity of assessing the quality of professional skills formation.

The developed methodology for modeling technical processes simplifies the creation of training courses at the CPC and forms skills for personnel at the required level. As an example, we considered the process of sterilizing canned food. The operator should know how to correctly and safely perform a sequence of actions at the required moment in time, for example, when to press a button or enter sterilization formulas, - said Ivan Polevshchikov, Candidate of Technical Sciences, Associate Professor of the Department of Information Technologies and Automated Systems of PNIPU.
