Fats from microorganisms
The search is constantly underway for new unconventional, still unused sources for the production of fats. Such sources can be microorganisms that have long successfully proved to be inexhaustible sources for organizing many industries, such as the production of enzyme and protein preparations, acetic acid, vitamins, ethyl alcohol, citric acid and other vital compounds.

2022: Vegetable oil created by microorganisms has appeared in Russia. 100 million rubles invested in the project
On September 20, 2022, the Efko agricultural holding announced the release of the first vegetable oil produced by microorganisms in Russia. About 100 million rubles were invested in this project at the first stage.
As explained in the company, fats from microorganisms are obtained by precision fermentation technology. To do this, conventional food yeast is modified so that they can produce fats as a result, which are a complete natural analogue of vegetable oils. Recombinant proteins are produced using the same technology. It is also widely used in the pharmaceutical industry - it is microorganisms that make all insulin today.
{{quote "We decided to develop fats from microorganisms, because they completely change the technological paradigm of our industry," says Sergey Ivanov, executive director of Efko. - For such oil, fields and plantations are not needed, elevators and oil extraction plants are not needed, and all technology fits into the enzyme plant. In the Middle East and Africa, which fully imports vegetable oils, such fats are a solution to food security. The biggest prospects are, of course, export markets. }} According to him, in two years the agricultural holding has seriously advanced in the development of technology and has set itself the task of obtaining an analogue of cocoa butter. Together with scientists from the Institute of Molecular Biology, the company is working on this project by September 2022.
{{quote 'Why chose cocoa butter as the first product? Because it's the most expensive vegetable fat. And nothing is growing for its production in Russia. That is, we get import substitution and breakthrough biotechnologies in one project, - Ivanov explained. }} Fats from microorganisms are the second foodtech project "Efko." In the summer of 2022, export supplies of vegetable meat began.[1]
