The volume of the pizza delivery market in Moscow and the Moscow region has increased 3.5 times since 2019 and reached ₽83,5 billion in 2023. In physical terms, excluding inflation, growth was 10%, according to a study published on October 31, 2024.
According to the agency for marketing research and business plans "GuideMarket," the market growth rate reached 29.3% over the past year. In 2020, there was a maximum growth of 69%, associated with a total increase in the share of delivery in the turnover of public catering.
In the market structure, 32% of companies develop their own delivery services, while half of them simultaneously cooperate with external services to access a wider client base and conduct joint marketing actions.
The most common connection of delivery is in non-chain restaurants with an average check from ₽500 to ₽1500. For these establishments, delivery is becoming a key tool for maintaining and strengthening customer loyalty. The economy segment attracts visitors with low prices and a wide range of points around the city, and restaurants with a high check - the atmosphere and level of service. The middle segment, in turn, has to look for alternative ways, and it is delivery that becomes their solution.
According to the agency, market participants are actively introducing new technologies, including their own mobile applications, accepting orders through instant messengers and installing pizzemates - automated devices for selling pizza.
Against the backdrop of rising ingredient costs, companies are optimizing costs and considering combining ready-to-eat and food delivery services. The growing popularity of healthy lifestyles is fueling demand for pizza with vegetable toppings.
The market is characterized by increased competition through promotions and promotions, which leads to a decrease in the average check and a weakening of customer loyalty to certain brands.[1]
Revenue growth of Moscow cafes, restaurants and bars by 16% to 550 billion rubles

According to researchers, in 2018-2022. the catering market in the Moscow region showed stable growth. The exception was 2020, when the COVID-19 pandemic led to a decrease in market volume by 26.9%. In general, the average annual increase was 22%, taking into account the decline in 2020.
Analysts highlighted several trends in the catering market in Moscow and the Moscow region in 2022. Among them is the increase in the number of chain restaurants and cafes, which is due to the fact that large chains can offer lower prices and high quality products.
Another trend is the development of the fast food segment: the rapid rhythm of life and the desire to save time are making the fast food segment more and more popular. Researchers say the main factor that affected the market in 2022 was a drop in real visitor incomes. The decrease in the number of visits to cafes and restaurants in the capital was further influenced by factors such as a decrease in the number of tourists, the departure of migrants and the emigration of Russians.
As experts emphasize, an important indicator of the state of the industry is the number of employees of cafes and restaurants. In September-December 2022, against the backdrop of the announcement of partial mobilization and the growing uncertainty of the industry's prospects, the number of employees of cafes and restaurants in Moscow decreased by 1-2.4% every month.
At the beginning of 2022, signs of stabilization of the situation in the activities of cafes and restaurants were noted. According to data, in Rosstat January 2023, the number of industry personnel increased by 9.3% by December 2022.
