2025: Launch of frozen sourdough production for the pharmaceutical industry

In February 2025, the first production of cryogranulated starter cultures in Russia was launched. This project was implemented by the Green Lines company (part of the Soyuzsnab group), investments in it amounted to ₽500 million.

According to the press service of Soyuzsnab, the development of the project was carried out for eight years and combined the efforts of biotechnologists and engineers who created unique installations from scratch. An automated cryogranulator has become a key element.

Technical features of production:

  • Freezing with liquid nitrogen at -196 ° C.
  • Production capacity - processing 1.8 million tons of milk per year.
  • High metabolic activity of strains.
  • Complete process automation.
  • Unique cryogranulation technology.

Vadim Ozerov, director of the production of starter crops of the Soyuzsnab holding, emphasized the uniqueness of the technology for Russia, where cryogranulation on an industrial scale has not previously been used.

The sourdough produced is used for milk fermentation in the production of fermented milk products and in the pharmaceutical industry. Production facilities allow you to fully meet the needs of the domestic market and export products.

Soyuzsnab Holding, founded in 1999, has 15 branches in Russia and abroad, including representative offices in China and Uzbekistan. The company's annual turnover reaches ₽15 billion. Production sites are located in the Moscow and Kaluga regions.

The company's structure includes the Research Center for the Food Industry and Pharmaceuticals, which includes a test laboratory center, a technology and development department, and a production laboratory. Its own raw material base is provided by the Green Lines-Kaluga agro-industrial complex.

The launch of the production of cryogranulated starters is part of the general trend of growth in investment in research and development in Russia, which in 2023 increased by 7.4% to ₽1,6 trillion.[1]
