Vineyard area. Geography

The vineyards of the Southern Wine Company are located on the banks of the Kiziltashsky estuary.

Terroir

In Vyshesteblievskaya, most of the vineyards grow on clay soils that retain moisture well and inhibit grape ripening a little, this helps preserve the aromas characteristic of the early stages of ripening and ensures the freshness and elegance of the aroma and taste of wine. Where the layer of clay beds turned out to be washed out, ancient calcareous soils came to the surface. They warm up more intensively than clay - this is important for late ripening varieties. Thanks to this feature, berries slowly gain sugar, are filled with high-quality tannins, which can give wine, such a velvety structure beloved by connoisseurs. Winter is usually mild: no more than a few really frosty days happen in January and February. The careful attitude towards the terroir led to the fact that the farm completely abandoned the irrigation of vineyards. It is not resorted to even in the years of the worst droughts. UVK winegrowers do not use synthetic fertilizers.
