2023: Supermarket sales start

On September 14, 2023, Austrian company Revo Foods began selling 3D-printed vegan salmon fillet. The product, called The Filet, is available at Rewe Group's Billa Pflanzilla supermarket in Vienna.

The salmon analog is based on mycoprotein derived from filamentous fungi. Specialists from the Swedish company Mycorena took part in the development of the technology. The vegan product is said to have a structure inherent in natural fish. Moreover, Revo Foods says that 3D-printed salmon is as good as traditional seafood in terms of taste.

The Filet

The company has developed a special extrusion process that allows the production of salmon substitutes with characteristic lamination and juicy fibers. 3D-MassFormer technology makes it possible to organize a continuous production process for the mass production of food products printed on a 3D printer.

Now we are focusing on alternatives to seafood, but this technology certainly applies to many other types of food, "said Robin Simsa, CEO of Revo Foods.

The startup Revo Foods, founded in 2020, received a grant of €2.2 million from the Austrian Research Promotion Agency. In addition, the company closed a funding round of €1.5 million. The aim of the project is to offer an environmentally friendly replacement for traditional fishing and aquaculture practices. As Revo Foods notes, many types of fish are overfished, which is why there is a serious risk of destroying the ocean ecosystem.
