2024: Growth of the Russian bakery products market by 14% to 731 thousand tons
The volume of sales of bakery semi-finished products in Russia in 2024 amounted to 731 thousand tons, which is 14% more than in 2023. Such data was published by the analytical agency BusinesStat in January 2025. The steady growth of the market has been observed over the past years and is accompanied by a significant increase in sales volumes - for the period from 2020 to 2024 they increased by 95%, which is associated with a change in consumer preferences and the development of the catering sector.
According to BusinesStat research, the main increase in 2024 provided a revival in demand from large retailers and establishments. HoReCa Key retail players such as X5 Retail Group and have been "Thunder" (Magnet) actively developing their bakeries, offering customers fresh baked goods made locally. The restoration of cafes and restaurants after the pandemic, as well as the growing popularity of fast food and street food formats, also contributed to an increase in the volume of purchases of bakery semi-finished products.
In 2020, the market for bakery semi-finished products in Russia experienced a 12% reduction, when sales amounted to 375 thousand tons. The main reasons for the decline were the coronavirus pandemic and a decrease in economic activity. However, already in 2021, the market showed a sharp growth - by 29%, reaching 485 thousand tons. Analysts attribute this to a gradual economic recovery and an increase in interest in instant products.
In 2022, the growth rate slowed to 9%, and sales reached 530 thousand tons. Nevertheless, in 2023 there was another significant increase - by 21%, which allowed the market to reach 642 thousand tons. Experts attribute this to the expansion of the assortment and the entry into the market of new manufacturers focused on both retail chains and the catering sector.
Among the factors contributing to growth in 2024, BusinesStat analysts highlight an increase in the share of products designed for fast baking, as well as its usability for end consumers and enterprises.[1]
