Sausage production in Russia has grown to 2.5 million tons - this is a record for 10 years

The production of sausages in Russia in 2024 reached 2.5 million tons, which was the maximum value over the past ten years. This was announced in March 2025 by the managing partner of Agro & Food Communication Ilya Bereznyuk. According to the data presented, production increased by 1.6% compared to 2023.

According to Vedomosti, no more than 50-55 thousand tons were shipped from the total volume of products produced for export, that is, almost all sausage produced in Russia was sold on the domestic market. Sausage sales in 2024 compared to 2023 increased by 16% in monetary terms and by 5% in kind, as follows from the Nielsen report.

Sausage production in Russia reached a record 2.5 million tons, which is the highest figure in the last 10 years

The growth in demand for sausages is also confirmed by large retailers. In the Perekrestok retail chain, the sale of sausages in 2024 increased by 17.2% in monetary terms. In Lenta, sales also showed positive dynamics, corresponding to the data of Nielsen.

The representative of the Lenta retail chain explains the growth in sales by an increase in disposable income of the population, especially in the regions. This point of view is shared by the Director General of the National Union of Pig Farmers Yuri Kovalev, who believes that the increase in demand for sausages in general and for meat delicacies in particular is associated with the growth of real incomes of the population over the past two years. According to Prime Minister Mikhail Mishustin, the real disposable income of Russians in 2024 increased by 8.4%.

The most actively growing segment is delicacies (bacon, carbonate, brisket, ham and others), the dynamics of sales in stores is several times ahead of the growth rate of other segments. Sales of such products in retail in 2024 in physical terms increased by 13% compared to 2023. In supermarkets and hypermarkets, delicacies already account for almost a quarter of the turnover of sausages.[1]

Sausage exports from Russia grew by 16% over the year and reached 95 thousand tons

On January 9, 2025, it became known that the volume of sausage exports from Russia in 2024 increased by 16% and reached 95 thousand tons. Russian products are supplied to 75 countries of the world.

According to Oleg Lityaykin, Managing Director of the Center for Industry Expertise of Rosselkhozbank, the Russian sausage meat market is showing stable growth and high potential for further development.

Sausage exports from Russia grew by 16% over the year

For the period from January to October 2024, the production of sausages and similar food products from meat and poultry in Russia amounted to 2.1 million tons, which is 2.1% more than in the same period in 2023.

The Central Federal District produced about 1 million tons of products, which is almost half of the total production. In second place is the Volga region with a share of 22%, in third - the North-Western Federal District with 9.1%.

Among the regions, the leading positions in terms of production volumes were taken by the Vladimir region, Moscow and the Moscow region, as well as Mordovia. The production of boiled sausages in ten months increased by 2.1% to 1.4 million tons.

The production of smoked sausage for the same period increased by 1.4% and reached 592 thousand tons. Domestic manufacturers are actively expanding the product line and improving product promotion strategies.

According to Rosselkhozbank estimates, Russian producers are successfully increasing the production of sausage products both for the domestic market and for export. Expanding the geography of supplies helps to strengthen positions in the international market.

The development of sausage exports is part of a strategy to increase non-resource exports and diversify the supply of Russian products to world markets. Manufacturers are actively working to increase the competitiveness of products.

Rosselkhozbank predicts a further increase in export supplies of sausages due to the expansion of production capacities and improvement of production technologies.[2]

2023

Growth in the production of sausage boiled products by 1.2% to 1.7 million tons

The production of sausage boiled products (sausages, sausages, sausages) in Russia in 2023 reached 1.7 million tons, which is 1.2% more than a year earlier. This is evidenced by the data of the analytical company TK Solutions, which were published in November 2024.

The Central Federal District is the leader in the production of boiled sausage (45.3% of production for the period from 2017 to 2023), in second place is the Volga Federal District (21.9% of production).

BusinesStat estimates that the sector in question is showing variable dynamics. So, in 2019, sales of sausages and meat delicacies in Russia decreased on an annualized basis by 1.3% - to 2.42 million tons. A year later, the volume of sales increased by 2.7%, amounting to 2.48 million tons. In 2021, growth was also recorded: demand rose by 3.5%, reaching 2.57 million tons. However, in 2022 there was a drop of 0.7% - to 2.55 million tons.

The study notes that due to the deterioration of the geopolitical situation and difficult macroeconomic situations, the incomes of Russians decreased, which caused the redistribution of the flow of visitors from traditional formats of network retail to supermarkets of low prices. Against this background, in addition to stably functioning discounters ("Traffic Light" - "Mayak," "Dobrozen," "Victory"), the projects "Chizhik" (X5 Retail Group) and "My Price" ("Thunder") were developing rapidly. As a result, the supply of sausage products at low prices increased, which stimulated sales growth.[3]

2022: Cut in sausage production by 1.9% to 2.56 million tonnes after two years of growth

In 2022, 2.56 million tons of sausages and delicacies were produced in Russia, which is 1.9% less than a year earlier. At the same time in 2020-2021. the market showed growth. This is evidenced by data from BusinesStat analysts, released in August 2023.

In 2018-2021. the production of sausages and meat delicacies in the country increased by 7.3%: from 2.44 to 2.61 million tons. At the same time, in the context of a decrease in disposable incomes of the population, the trend of recent years has been a decrease in the volume of packaging of manufactured products. Manufacturers began to make smaller sausages and delicacies, which made it possible to offer more acceptable prices for finished products.

In 2022, the reduction in output was the result of a crisis and weakening demand both in the domestic market and from foreign buyers, the researchers explain. In their opinion, in addition to problems in the industry, the expected drop in exports will also negatively affect output, as well as the weakening demand for sausages on the Russian market due to the economic crisis.

The Russian market for sausages and delicacies consists of 98% of its own products. But at the same time, domestic output depends on imported components. In July 2022, the European Union stopped importing artificial shells to Russia, necessary for the production of sausage products. Acting as the main supplier of such shells to the Russian market (more than 70% of all imports), the EU, by its decision, created a number of problems for the Russian meat processing industry. After the announcement of the sanctions ban, sausage manufacturers began to search for shell supplier countries alternative to the European Union to the Russian market. Industry representatives are primarily considering increasing purchases from China, Serbia and India. The option of replacing the shell type is also being considered, according to a study published in August 2023.[4]

2021: Stopping the shuttle import of sanctioned sausages from Belarus and a plan to solve the problem with Kazakhstan

The head Rosselkhoznadzor Sergey Dankvert in April 2021 called for the fight against the "shuttle" import of sanctioned cheeses and sausages into the Russian Federation. 2020: Growth of Russian sausage exports by 26%, to $93 million

In 2020, Russian sausage exports grew by 26% and amounted to $93 million. In quantitative terms, Russia sent 45 tons of such products abroad, which is 30% higher than a year ago. This is evidenced by the data of the Agroexport center subordinate to the Ministry of Agriculture of the Russian Federation.

Most sausages from Russia are supplied to the countries of the former USSR. Kazakhstan remains the leader, which in 2020 purchased Russian products of this type in the amount of 33 thousand tons in the amount of $63 million, which is 22% and 21% more, respectively, compared to 2019. Exports to Ukraine increased by 54% in physical terms (up to 5.8 thousand tons) and by 43% in monetary terms (up to $14 million). Azerbaijan increased imports of Russian sausage products by 43% to 3.6 thousand tons in the amount of $8.6 million (+ 26%).

The company Abi (brands Vyazanka, Starodvorye, Yadrena Kopot, etc.), despite the pandemic COVID-19 in 2020, was able to increase the export of sausages to Kazakhstan, Azerbaijan and, Abkhazia as well as enter the market. Uzbekistan

The Cherkizovo Group (brands Cherkizovo, Empire of Taste, Meat Province, Pava-Pava, etc.) at the end of 2020 increased the export of sausages by 25% to 5.2 thousand tons. Including supplies to Azerbaijan increased by more than 1.5 times, to Ukraine - by more than 25%, to Kazakhstan - by about 20%, geography was expanded due to the start of supplies to Uzbekistan and Georgia.
