The turnover of the bakery market in Russia for the year increased by 10% to 124 billion rubles

The turnover of Russian bakeries in 2023 reached 124 billion rubles, an increase of 10% compared to the previous year. Such data were presented in April 2024 at the Romir research company.

According to Forbes, citing the Romir report, the number of transactions in bakeries in the Russian Federation by the end of 2023 increased by 27% and reached 398 million checks.

The turnover of Russian bakeries in 2023 reached 124 billion rubles

According to the study, the leaders in the number of bakeries are Moscow and St. Petersburg. In the capital, the number of culinary bakeries for the year (from January 2023 to January 2024) increased by 20.93%, or by 532 objects. By mid-April 2024, there are 3,161 points in Moscow and the nearest suburbs. In St. Petersburg and its nearest suburbs, the number of such institutions over the same period increased by 14.86%, or 302 points.

The size of the audience of bakery-cookery amounted to 37.8% of the living Russians in cities with a population of 100,000 or more, according to Romir. This is 2.7 pp more than in 2022. The popularity of bakery cooking has been growing especially rapidly over the past two years, for many Russians the format has become "an ideal solution for quickly buying food on the go," commented Margarita Abramkina, director of customer service at Romira.

According to Mikhail Burmistrov, General Director of INFOLine-Analytics, the increase in the number of bakery-cooking facilities is associated with their opening in new residential complexes, as well as with a significant increase in the number of points in small-format facilities, for example, in stores.

Real estate consultants interviewed by the publication agree that the format of bakery-cooking is actively developing, especially in the vicinity of residential buildings or directly in them. This is largely facilitated by developers who in their new projects provide for areas for bakeries, cafes and restaurants in advance. The share of the latter in LCD is constantly growing and can reach 20%, experts say.[1]

Increase in the output of bakery products production equipment by 2 times

In 2023, Russia produced twice as much equipment for the production of bakery products as a year earlier. Such data at the end of January 2024 were published in the Russian Association of Manufacturers of Specialized Equipment and Equipment (Rosspetsmash).

The share of domestic equipment increased at 30%. That is, the import is replaced. In Russia,
twice as much equipment for the production of bakery products was produced than a year earlier

In March 2023, Prime Minister Mikhail Mishustin said that approximately 55% of domestic equipment is used in the Russian food industry, and this figure is 46% for the bakery industry. Then the Prime Minister of the Russian Federation pointed out the need to conduct an experiment on the use of Russian-made equipment at domestic bakery products. He believes that in this way it will be possible to get away from imports and improve automation.

Ministry of Industry and Trade The ministry stressed that Russian machine builders are launching turnkey bakeries. The department also listed the types of products: silos and silos for storing flour of various volumes, conveyors, machines for kneading, fission and molding dough, technological equipment for baking, and so on. According to the Ministry of Industry and Trade, by 2023 the largest enterprises - manufacturers of such equipment are JSC NPP Voskhod, JSC SHMZ, LLC Machine-Building Plant SAMZ, LLC Russian Trapeza, LLC TvZPO, JSC ONIIP, LLC Torgmash Plant[2]

Increase in sales of bakery semi-finished products by 20.3% to 721 thousand tons

The volume of the Russian market for bakery semi-finished products in 2022 amounted to 721 thousand tons, which is 20.3% more than a year earlier. Such data are provided in the BusinesStat study, excerpts from which were published in October 2023. Analysts attributed the growth in sales of such products to the following factors:

  • recovery in the catering sector following the pandemic downturn;
  • rapid growth in demand from bakeries, including chain ones: consumption of traditional bread decreases every year, an increasing share of demand falls on fresh baked goods made from semi-finished products;
  • the development of the restaurant business and fast food chains, where frozen bread and bakery products are in growing demand;
  • change in the consumption pattern of Russians: acceleration of the rhythm of life leads to an increase in interest in instant foods;
  • the growth of the modern retail segment, especially large retail chains, where separate freezers are allocated for bakery freezing.

BusinesStat reported in October 2023 that in the near future, these drivers of sales of bakery semi-finished products will continue to operate. The high potential for market growth is evidenced by the fact that in Western countries about 85% of catering establishments bake bread independently from bakery semi-finished products, while in Russia the share of such enterprises is still small. Retail sales of frozen convenience foods also have a long-term upward trend, a consequence of the accelerating pace of life.

Bakery semi-finished products include:

  • pancakes
  • burgers, hot dogs, shawarma
  • croissants
  • pizza base
  • pies
  • pizza
  • layers with filling, strudels
  • dough
  • bread and products without filling
  • chebureks, khachapuri, samsa[3]

Growth in yeast production by 1.7% to 138,103 tons

In 2022, 138,103 tons of yeast were produced in Russia, which is 1.7% more than a year earlier. From 2017 to 2022 the market volume grew by an average of 1.2%, analysts at TK Solutions, whose data were published in August 2023, calculated.

According to researchers, the Central Federal District is the leader in the production of yeast in Russia, which in 2017-2022. accounted for 56.6% of the volume of production of these products. The second place was taken by the Ural Federal District (20.2%). The following companies are named the largest yeast producers in the Russian Federation:

  • LLC "Lgovsky yeast";
  • OJSC "Drozhevaya zavod" Penzensky ";
  • ZAO Sarapulsky Drozhzhepivzavod;

Yeast production is growing in Russia

Bakery yeast is the main type of raw material for the production of bakery products. The technological and functional role of yeast consists in biological loosening of the dough with carbon dioxide released in the process of alcohol fermentation, giving the dough certain rheological properties, as well as the formation of ethanol and other reaction products involved in the formation of the taste and aroma of bakery products. The industry produces yeast milk, fresh (pressed) yeast and dried bakery yeast. The latter can be active and fast (instant).

During the 2019-2022 period, the average prices of producers for pressed bakery yeast increased by 25.6%, from 40,580,2 rubles/ton. up to 50 959.4 rubles/ton. The largest increase in average producer prices occurred in 2021, then the growth rate was 14.7%. The average price of producers for pressed bakery yeast in 2022 increased by 6.6% to the level of last year and amounted to 50,959,4 rubles/tons.[4]
