"Now we offer our guests full-fledged meals for breakfast, lunch and dinner - with a wide choice and the ability to combine our menu for every taste: steamed fish with asparagus or pasta with chicken and cream sauce or non-meat cutlets with vegetable salad or smoothies with L-carnitine before training," said Natalia Krokhova, one of the project leaders.

In the new format, cooking is presented for weight. In total, there are more than 130 items on the menu: second courses, salads, snacks, pastries, sandwiches, desserts and various drinks. The assortment is assembled from the most popular dishes of the cafe zone in stores and supplemented with new products in accordance with catering trends.

As noted in the VkusVill company, to test the new format, the team chose locations of different types, focusing on customer traffic, proximity to the metro, location near residential areas and office spaces. The task of the project is to make high-quality and healthy dishes more accessible to residents of different areas of the city and outside the Third Transport Ring.

Investments in the project in the company do not disclose. General Director of Infoline-Analytics Mikhail Burmistrov estimates the opening of one facility with 10 seats at 3-5 million rubles (depending on the kitchen equipment). According to the expert, VkusVill is successfully developing the segment of "ready-made food" both in stores and in darksters, a significant part of which is equipped with "dark kitchens," as well as a project of micro-markets for the sale of ready-made food and snack products in offices, so the opening of cafes in a small area in places with high traffic effectively complements the portfolio of formats.[1]
